docs(readme): polish README to focus exclusively on app capabilities and features

- Remove technical architecture diagrams and roadmap references
- Expand on Zero-Cloud Privacy Manifesto, on-device architecture, and feature matrix
- Add dedicated sections for cellular calling, T9 dialpad, contact management, screening, dual SIM, and local recording
- Link developer guides and specifications to respective documentation files
