feat(symbols): version-tag stamped codepoints to match fonts to symbols

SF Symbols PUA codepoints are tied to a specific SFSymbolsFallback.otf and can
shift across major releases. Migration v24 adds sf_symbols.codepoint_version;
the stamp step now records the provisioned app's version (e.g. "8.0") next to
each resolved codepoint, and the catalog exposes it as codepointVersion.

The snapshot ships exactly one SF Symbols font version, so tagging codepoints
with that version makes the codepoint-to-font correspondence explicit, lets a
consumer match the shipped SFSymbolsFallback.otf to its codepoints, and surfaces
drift on the next sync. Unversioned stamps (legacy/tests) leave it null.
