[AssetMapper] Add an "asset_mapper.metadata_dir" option

manifest.json, importmap.json and entrypoint.*.json are read by PHP only, but they are written to the public assets directory and therefore served over HTTP. This option allows writing them somewhere else. The default is unchanged.
