Fix misleading map_sqlx_postgres_before_acquire doc example

The example paired test_before_acquire_if_idle_for with a callback that
pinged unconditionally, which pings on every acquire and defeats the idle
threshold. Replace with a custom check (recycle connections by age) that
shows a genuine use of the hook.
