Update project status and docs from Alpha to Beta Transition all documentation, banners, and config files from "v2 Alpha" to "v2 Beta" status. Update all references, installation instructions, and quick start guides to use "2.0.0-beta.*" packages and templates. Adjust release and GitVersion config to use "beta" as the default pre-release label. Clean up solution file by removing CharacterMap.md reference. No functional code changes; this is a versioning and documentation update to reflect the new Beta release phase.
